1 small cauliflower
3 tablespoons vegetable oil
1/2 teaspoon cumin seeds
1 1/2 cups finely chopped onions
2 garlic cloves, finely chopped
salt to taste
1 teaspoon ground coriander seeds
1/2 teaspoon ground cumin seeds
1/2 teaspoon garam masala
1/4 to 1/2 teaspoon cayenne pepper
1/2 teaspoon turmeric
1 cup frozen peas
1 tablespoon lemon juice

Directions:

Cut the cauliflower into florets and grate them coarsely in a food processor with a hand grater. Set aside.
Warm the oil in a nonstick skillet over medium-high heat and add the cumin seeds. After a few seconds, add the chopped onions and garlic. Saute for about 8 minutes, until they are lightly browned. Stir in the grated cauliflower, slat, and all the spices, then add the peas. Reduce heat to medium-low, cover, and cook until the cauliflower is tender, about 20 minutes. Stir occasionally. Turn up the heat, uncover, and boil off any accumulated liquid, stirring gently for a few minutes. The cauliflower should be cooked dry when done. Add the lemon juice and serve hot. This dish can be made up to 3 days ahead o time.
