Potatoes (Yukon Gold or red)
Beets
Onion
Turnip
Diakon Raddish
Garlic
Oilve Oil
Salt
Rosemary

Directions:
Directions:
Mince the onion, garlic and rosemary
Chop all other root vegetables into 1 inch cube pieces.
Toss all together with olive oil and salt
Pour into foil lined baking pan, cover with foil and cook in 350 oven for 1 hour.
Uncover and let brown for 10-15 minutes

This is a nice winter vegie dish, suitable for large gatherings such as Thanksgiving, and easy enough for everyday dinners. Leftovers are good heated, or at room temp. and can be easily embellished with cheese and/or meat for variation.
