Veggie or olive oil - 2 Tbsp
Eggs - 2 per person
Milk - a splash - 1 Tbsp per 2 eggs?
Grated cheddar cheese - to taste, 1/4 C per person -ish
Mild Salsa - to taste, 1 Tbsp per egg - ish

Directions:

Add oil to medium sized skillet and heat to medium temp
Whisk eggs and milk together
Pour egg mix into heated skillet, flip occasionally till almost done, but still runny
Turn off heat, add cheese and salsa and cover pan with tight fitting lid.
Let set a minute, then flip everything around and let sit longer till completely done, no runny parts.
Divide onto plates, serve with toast
