8 inch pie:
1/4 Tsp salt
1/4 tsp vanilla
2 egg whites
4 Tbsp sugar

9 inch pie:
1/4 Tsp salt
1/2 Tsp vanilla
3 egg whites
6 Tbsp sugar

Directions:
Directions:
Beat egg, vanilla and salt to stiff foam.
Add sugar a Tbsp at a time and distribute it over the surface of whipped eggs, beating between additions
Continue beating until it has a moist luster and forms stiff peaks.
Distribute in large globs over the surface of the pie filling and push around with a spatula until all meringue is contiguous, including the rim of the pastry.
Make peaks by placing flat side of spatula lightly on meringue and lifting quickly
Repeat until it becomes a total masterpiece. This is the fun part.

Bake at 350 deg. F until peaks are nicely browned, about 12 - 15 minutes.
