1 hen, cut into 8 pieces
1/2 cup chopped onion
1/2 cup chopped bell pepper (green)
1/2 stick butter
4 cans chicken broth
2 chicken boubillion cubes
water as needed
salt and pepper to taste

DUMPLINGS
2 cups sifted flour
1 teaspoon salt
1/2 tsp. baking powder
1/4 tsp. baking soda
1 beaten egg
2/3 cup milk, approximately
2 Tlbs. melted butter

For Chicken:
Wash hen. Put hen pieces into deep pot. Add onion, bell pepper,butter, chicken broth, bubillion cubes, water, salt and pepper to taste. Cover and let cook 3/4 of the way done.(appx. 1 hour). Stick a fork into the thickess part of the hen and test for tenderness and doness. If hen seems to be 3/4 of the way done, add dumplings one at a time to the hen gravy, stir as you drop each piece into the pot so they want stick together. Cover tightly and cook for 15t to 20 minutes (do not raise cover while cooking as the dumplings will not steam well and fall apart. Taste for rich flavor and well cooked dumplings. Dumplings should be very chewable and tasty.

DUMPLINGS:
Sift together all dry ingredients. Add egg, butter, and enough milk to make a stiff batter. Roll into a ball. Roll ball out on floured table spreading the dough out from the center to flatten about 1/8 inch thick. Cut into small squares. Squares should be about 1" wide in lenth and in width, drop squares, one at a time into hen gravy. Stir constantly so squares will not stick together. Allow squares to thicken in hen gravy. Cover and allow to cook for 15 minutes.
