3 lbs. lean neckbones
Water
1/4 cup bacon fat,fried pork chop fat or fried chicken fat, (this is for seasonings,all three can be mixed together to equal 1/4 cup
salt and pepper to taste
2 cans pork broth
1 small onion
2 cups rice (Uncle Ben's or Carolina Rice)

Wash neckbones. Put neckbones in a deep pot with enough water to slightly cover them. Pour in fat,salt and pepper,broth and onion . Let cook until neckbones are almost tender,(appx. 1-1/2 hours or less ) Stick fork into one of the thickest ones to test for tenderness. If neckbones are 3/4 done, add rice. stir rice frequently. Note: Add more water to neckbones if necessary for more moisture until rice and neckbones are completely done and ready for serving.

Constantly taste your broth for richness in taste. If broth on neckbones are too weak you can add some butter.
