1 1/2 Cup Butter
1 Lb. Velveeta Cheese Cut Into Small Cubes
3 Medium Onions Chopped
2 Medium Bell Peppers Finely Chopped
3 Cloves Of Garlic (Minced)
4 Tbsp Parsley
3 Lbs Of Peeled Crawfish Or Shrimp
Salt, Red And Black Pepper To Taste
1/4 Cup All Purpose Flour
1 Pint Of Half And Half
1 Tbsp Fresh Jalape�o (Can Use Relish If Preferred)
Parmesan Cheese
1 Lb Fettuccine Noodles

Melt butter in a sauce pan. Add onions and bell pepper and saute till tender. Add flour, stir and cook 15 minutes until thickened. Add half and half, velveeta, parsley and all seasonings and cook till all melted. Add seafood of choice or can use grilled boneless chicken as well. While this is simmering, boil fettuccine noodles and drain. Then combine noodles and cheesy mixture into a large rectangular casserole dish. Sprinkle with Parmesan cheese and bake for 15-20 minutes at 350 degrees.
