3 lbs chicken pieces, bone-in (Any parts or just thighs and legs...your choice.)

1/2 cup low salt soy sauce (Kikkoman)

2/3 cup vinegar White Filipino Vinegar

1-2 garlic clove, crushed

2 bay leaves

1 teaspoon peppercorns, crushed

salt to taste if needed

Directions:
Directions:
1. Clean chicken pieces with salt until it feels clean and not slimy.
2. Heat 2 tbls of olive oil and toss in the fresh crushed garlic until golden brown.
3. Add the clean chicken pieces in the skillet until slightly brown.
4. Mix in the vinegar, soy sauce, seasonings and the chicken pieces. Bring to a boil and simmer for about 60 minutes until the chicken is tender and sauce is reduced by half. I simmered with the lid on for about 45 minutes and took the lid off the last 15 to let the sauce reduce.
5. Add salt to taste. Serve hot over rice. Enjoy
