5 Lbs Red Potatoes
1 Dozen Eggs
3/4 Cup Canola Oil
3/4 To 1 Cup White Vinegar
1 Large Onion Sliced In Rings
Salt And Black Pepper To Taste

Peel and boil potatoes. Boil eggs. Some people boil the eggs and potatoes together, I don't.) While potatoes and eggs are boiling, in a 10 in. skillet add oil, heat a little and add onions and saute for about 5 minutes, add salt and pepper, then add vinegar and lower heat. Let simmer about 5 to 10 minutes.Take off heat and set aside. When potatoes are done, drain, let cool about 15 minutes. Meanwhile drain your eggs and peel them. Slice potatoes (about 1/8 to 1/4 inch thick). Layer in casserole dish or platter or whatever you choose to serve them in and then slice eggs and layer on top potatoes and pour onion mixture over them and repeat until all done ( about 2 or 3 layers, depending on size of dish. Can be served warm or cold. I find it is better to let it set for at least an hour or so or even overnight.
