2 1/2 c. flour 3 Tbsp. salad oil
1 c. sugar 3/4 c. milk
3 1/2 tsp. baking powder 1 egg
1 tsp. salt 1 c. mashed ripe bananas (2 to 3 medium)
1 c. finely chopped nuts (optional)

Directions:
Directions:
Heat oven to 350º. Grease & flour 9x5x3 loaf pan or two smaller pans. Put all ingredients into a large mixing bowl and beat on medium speed for 1/2 minute, scraping side & bottom of bowl constantly. Pour into pan or pans. Bake 55 to 65 minutes or until wooden pick in center comes out clean. Remove from pan and let cool before slicing.
