2 C chopped red apples
1 C chopped nuts
1 C sugar
1 C flour
1 egg beaten
1 Tsp baking soda
1/2 Tsp salt
1 Tsp cinnamon
1/4 C oil
Directions:
Directions:
Mix dry ingredients, add apples, egg and oil
Bake in 8 x 8 greased pan
375 deg F, 30 min

This is a real winner of a coffee cake with just plain old apples from the store but becomes outstanding when apples from Aunt Sarah's Jonathan apple tree or Grandma Joann's Pink Lady apple tree are used.
