1 lb. boneless pork tenderloin
2 green bell peppers
1 can pineapple chunks, drained
½ c. cornstarch
Cooking oil

Marinade:
½ tsp. salt
½ tsp. soy sauce
1 tbsp. cornstarch
1 egg yolk
1 tbsp. cold water

Seasoning sauce:
3 tbsp. vinegar
¼ c. sugar
¼ c. ketchup
5 tbsp. cold water
3 tsp. cornstarch
1 tsp. salt
1 tsp. sesame oil

Directions:

Pound pork with the back of meat cleaver to tenderize meat. Cut into 1 in. pieces. Soak in marinade for at least ½ hour. Cut green peppers into 1 in. pieces. Set aside with drained pineapple. Mix ingredients for the seasoning sauce and set aside.
While heating cooking oil in large skillet, coat the cut pork with ½ cup of cornstarch by dredging or shaking in a plastic bag. Once oil is hot, fry the pork pieces, turning to cook on both sides until brown, about 2 minutes per side. Drain cooked pork on paper towels.
Drain off all by 2 tablespoons of cooled oil. Reheat retained oil until hot and fry the green peppers and pineapple pieces, stirring constantly. Add the seasoning sauce, continuing to cook and stir until thickened. Remove the pan from heat and add the pork. Mix well and serve immediately over rice or noodles.
