2 Acorn Squash
1 Lb Ground Turkey
1 Can Black Beans
1 Onion
1/2 Bell Pepper
1 Can Rotel
Season To Taste
1 Cup Cheese
1/2 Cup Water
2 Tbsp Butter

Directions:
Directions:
Cut squash in half dig out all of the seeds, stab with fork. Place in a baking pan with 1/2 cup water 1 Tbsp of butter and seasoning. Bake Acorn Squash on 350* for about 1 hour half side down. While that is baking, cook your stuffing. Saute your onions, bell peppers, and rotel in 1 Tbsp of butter . Add meat to mixture. Once it is cooked add black beans and let simmer. Once the Squash is softened fill with stuffing add cheese to top and put back in oven only to melt the cheese.
