2 pounds ground beef
2 eggs
1/4 C ketchup
1.5 Tsp dry onion flakes
2 Tsp seasoning salt
1/4 Tsp pepper
4 ounces cheddar cheese, shredded
Glaze

Mix all but the glaze in a large bowl until well blended. Line a 9x5" loaf pan with heavy duty foil. Lightly press meat mixture into pan, push sides of foil up to form a collar to catch any excess grease.

Glaze:
1/2 C ketchup
1/4 Tsp dry mustard
2 Tbsp sugar

Mix glaze ingredients and spread over the uncooked meatloaf.

Bake at 425 deg. F for 15 minutes. Reduce temp to 325 deg F and bake about 50 minutes longer. Let rest a few minutes before draining off the grease and slicing.

I've used combinations of ground beef, pork and sausage for this all with great success. Left overs are awesome in a sandwich the next day.
