Prepare and set aside:
8x12 glass baking pan dusted with powdered sugar

3 envelopes of unflavored gelatin
1.5 C water
Combine in mixing bowl and let stand 30 minutes

1.5 C granulated sugar
1 C light corn syrup
1/4 tsp salt
1/2 C water
Place in small, heavy sauce pan and cook over low heat and stir until sugar has dissolved. Use a pastry brush on the sides of the pan. Clip on a candy thermometer and raise heat to high. Cook without stirring until it reaches 244 degrees F (firm ball stage) then remove from heat.

With mixer whisk attachment and mixer on low speed, slowly pour syrup into softened gelatine. Increase to high speed and beat until mixture is thick and white and tripled in volume, about 15 minutes.

Add 2 Tbsp pure vanilla extract or other extract (peppermint) and beat into mix.

Pour mix into prepared pan and dust top with powdered sugar. Dampen hands and pat to smooth. Dust with powdered sugar again and let stand overnight, uncovered, to dry out.

Turn onto a board dusted with powdered sugar and cut marshmallows with dry, hot knife into 1.5 inch squares and dust with more powdered sugar. Enjoy!

When I was in high school, one of my friends had a holiday Christmas vacation sleep over and her mother made these. They were so good, we asked for the recipe but she refused saying it was a family secret. I thought that was so stupid, I've passed out recipes ever since. Anyway, I found this recipe in a newspaper; so much for secrets!
