1/2 Cup Butter
2 Tbsp Flour
2 Medium Onions Chopped
1/2 Bell Pepper Chopped
2 Lbs of Peeled Crawfish Tails
1/2 Cup Chopped Green Onion Tops
1/2 Cup Chopped Parsley
Salt, Black Pepper and Cayenne Pepper To Taste
1/4 Cup Butter
1 Baked 9" Pie Shell

Directions:
Directions:
Make a light brown roux with butter and flour, add onion and bell peppers and cook until onions are transparent. Add crawfish tails and green onion tops and cook about 20 minutes. It may be necessary to add a little water if mixture starts to stick to the bottom of the pot. Add parsley, salt, peppers. Pour into a baked 9" pie shell and bake at 350 degrees for 20 minutes.
