Peel and slice a large eggplant. Flour each slice and dip in egg and bread crumb. Broil, watching closely, so is not to burn, broil on both sides Layer eggplant, sauce,and cheese (mozzarella) in baking dish. Top with sauce and cheese. Bake in slow oven (325º) for 45 min. to 1 hr.
