1 1/2 Cup Yellow Cornmeal
1/2 Cup All-Purpose Flour
1 Tbsp. Baking Powder
1 1/2 Tsp. Baking Soda
1 Tsp.Salt
2 1/2 Cups Boiling Water
1/3 Cup Canola Oil (Crisco)

Heat oil in a three or four quart cast-iron pot at about medium high heat while you mix the first 6 ingredients. When oil just begins to smoke, pour in the mixture. Wait about three to five minutes before stirring .After stirring, lower to medium heat and cover. I check about every two to three minutes and stir some more until it's cooked. We like ours lumpy. If you prefer it not so lumpy, then add less water and stir often. I would say it takes about 30 to 40 minutes to cook. Serve with cold milk and if you like, sprinkle a little sugar over it... ENJOY
