4 Large Potatoes
1/4 c. Four Cheese Mexican Blend shredded Cheese
3 tbsp butter
1/2 c milk
2 "Aidell's Cajun Sausages"
4 strips of bacon
1tbsp salt
1/2 tbsp pepper
* Sour cream (optional)

Directions:
Directions:
Bring a medium sized cooking pot with water to boil
Cube Potatoes and set in water. Allow to cook until smooth enough to stab with a fork.
While the potatoes are boiling fry the bacon until crispy. Do not throw out bacon grease.
Cut the uncooked sausages into bite size pieces and then fry in the bacon grease.
Cut the now fried bacon into pieces so they are more like bacon bits.
Set the meats aside.
The potatoes should be ready by now. Drain the water, mash and add butter, milk, salt and pepper.
Place mashed potatoes in a serving bowl. With the bottom of a round ladle make and imprint (groove) in the center of the potatoes.
Place 1/2 of the cheeses into the groove.
Mix the remaining cheese with the two meats then place the mixture on top of the potatoes and cheese.
*Sour cream is optional.

This became a family favorite after many attempts to order Loaded Potatoes while dining out. My husband is very picky and most places would include the veggie (green onion "chives"). We originally just used cheese and bacon until one day I found some spicy Cajun sausages in the fridge and threw them on top.
After years of cooking there are two things I learned that are a must in every woman's kitchen. 1) Butter 2) Bacon fat
