1-2 lb. Pot Roast
1/4 c plain flour
2 tsp salt
1/8 tsp ground black pepper
1 T oil
2 small onions -sliced
1 stalk celery-chopped
1 c Beef stock (or 1 1/2 c chicken stock)

GRAVY -
3 tsp plain flour
4tsp water

Trim all excess fat from the roast

Combine 1/4 c flour, salt and pepper on a flat plate. Coat the meat in the flout mixture. Heat a large pan with oil and brown the beef.

Place onion and celery in the crockpot, then pour in the liquid stock and top with the roast (cut roast in half if it won't fit flat)

Cover and cook on low for 8-10 hours.

Remove the roast from the slow cooker and allow to sit until you make the gravy (about 10 minutes)

To make gravy, pour all the juices from the slow cooker into a pot and puree with a whisk. Put the stove on the lowest heat. In a seperate bowl mix flour and water until it makes liquid paste. Slowly add flour and water mixture into the gravy pot, mix the gravy until it thickens.

Slice the beef and serve with roasted vegetables and gravy.
