3/4 C sugar
2 T Lemon zest + 2 T Juice
1 3/4 C unbleached All Purpose Flour
1/4 tsp baking powder
1/4 tsp salt
12 T or (1 1/2 sticks) cold unsalted butter cut into 1/2 - inch cubes
1 large egg yolk
1/2 tsp. Vanilla

Lemon Glaze

1 T cream cheese, softened
2 T juice from 1 lemon
1 1/2 C confectioners sugar

Using a Food Processor:
Mix zest and sugar. Add the flour, baking powder and salt. Pulse to combine, (about 10 pulses). Scatter butter cubes, pulse until it resembles cornmeal (about 15 pulses). Beat together the lemon juice, egg yolk and vanilla with fork. With machine running, add the juice mixture slowly, combine until dough begins to form into a ball. Roll dough into a log. Chill until firm. (45 minutes in freezer or 2 hours in fridge).
Cut into 1/4 in slices and place on parchment paper or a sprayed cookie sheet.

Bake at 375º for 14 - 16 min. until edges are golden. Remove from pan and cool on rack.

Beat glaze ingredients together.
Drizzle and Eat!
