1 pork tenderloin (~ 1 lb)
1 T fresh lemon peel
2 T lemon juice
2 T fresh sage leaves, finely chopped
1 c. Italian style Panko bread crumbs
1/2 c. grated Parmesan cheese
1 tsp kosher salt (fine)
2 egg whites
1.5 c. lowfat milk
1 T butter
1 packet Knorr garlic/herb sauce mix

Directions:
Directions:
Preheat oven to 425 degrees.

Combine on a plate the lemon peel, panko crumbs, Parmesan cheese, and salt.

In medium bowl, combine egg whites and lemon juice; dip pork lightly into egg mixture, then press and turn in the panko bread crumb mixture to coat.

Bake 20-25 minutes or until 160º

For sauce, combine the milk, butter and sauce mix; bring to a boil on medium, whisking to blend. Reduce heat, stir in sage and stir continuously for 2-3 minutes until thickened.

Slice pork and serve with sauce over top.
