6 large Granny Smith apples (peeled and diced smally)
2 c. (or more) toasted almonds or walnuts (roughly chopped)
2 tbsp. vanilla
2 tbsp. cinnamon
6 c. all purpose flour
2 tsp. baking soda
2 tsp. salt
2 c. packed dark brown sugar
2 1/2 c. vegetable oil (may substitute butter for some but not all oil)

Preheat oven to 325º F. Lightly grease a large lasagna dish.
In (very) large mixing bowl, mix together apples, nuts, vanilla, and cinnamon. In seperate mixing bowl, sift together flour, baking soda, and salt.
Using an electric mixer, beat together eggs and sugar until light and pale (several minutes) add oil or butter and beat for an additional minute until completely combined. Add flour mixture and combine. Fold into apple mixture.
The batter will be very thick.
Scrape batter into prepared pan and bake for 1 hour and 30 minutes, checking every 15 minutes after the first hour. Cake is done when a tester inserted into center comes out clean.
Allow cake to cool fully in pan.
Serve with vanilla ice cream or warm caramel sauce. Feeds about 16.
