1 box ziti, cooked al dente
1 (8 oz.) block of Cabot Hunter's extra sharp cheddar
1 (24 slice) package Kraft deli sliced american cheese
1/2 c. margarine
milk
4 tbsp. flour
salt and pepper to taste
1 package crisply cooked bacon (optional)
1 small box white cheddar Cheez-its (optional)

Cut up cheese into 1 inch blocks and put in a large pot with margarine. Pour in milk until just the tips of the cheese is showing. Add salt and pepper. Cook over medium-high heat, stirring occasionally. Use a whisk towards the end to ensure all the cheese is melted and creamy. In a small bowl whisk together flour with about a cup of milk. Slowly add flour/milk mixture to cheese sauce, whisking continually until thick and creamy. Add ziti, stir until thoroughly covered in cheese. If adding bacon, stir in bacon. If putting a cracker topping on, transfer mac and cheese to a casserole dish. Preheat oven to broil. Put crackers in a large ziploc bag and crush with a rolling pin. Sprinkle crackers on top of mac and cheese and put into oven, looking in every 10 seconds or so - should only take about 30 seconds to get a good brown on the crackers. Enjoy!
