1 box white cake mix
¼ cup veg oil
1 ¼ cup buttermilk
3 large eggs
3.5 ounces flaked coconut

Cream Cheese frosting
8 oz cream cheese
1 stick butter
16 ounces confectioner’s sugar
2 teaspoons vanilla

Directions:
Directions:
Mix first four ingredients for two minutes. Stir in the coconut.
Pour into 3 prepared 9 inch round pans and cook at 350 for 15-18 minutes in pan
Cool for 20 minutes on a wire rack.
OPTIONAL: brush each layer with 1 tablespoon of clear rum while it is cooling.

Frosting:
Cream the cheese and butter together. Gradually add the sugar. Then add the vanilla.
