2 10 oz package fresh spinach
1/2 cup sugar
1/2 cup apple cider vinegar
1 teaspoon grated purple onion
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 cup vegetable oil
3/4 cup finely chopped apple - red unpeeled
Garnish with purple onion slices

Directions:
Remove stems from spinach; wash leaves thoroughly and pat dry. Set aside. Combine sugar, vinegar, onion, mustard, salt - stir with whisk. Gradually add oil, whisk rapidly until thoroughly blended. Stir in chopped apple. Stack several spinach leaves together; roll tightly. Slice at 1/2" intervals, forming ribbons. Repeat with remaining leaves. Toss.
