1 c. sugar
2/3 c. pumpkin
¾ c. flour
1 tsp. baking powder
2 tsp. cinnamon
½ tsp. nutmeg
½ tsp. salt
½ c. chopped pecans (optional)

Cream Cheese Frosting

2 ½ c. powdered sugar
8 oz. cream cheese
8 tbsp. butter
1 tsp. vanilla
1 tsp. cinnamon

Beat eggs on high speed for 5 min. Blend in pumpkin, sugar and all dry ingredients. Spread onto greased and floured 11x14 baking sheet. Top with pecans. Bake at 375º for 15 min. Immediately out of oven turn onto a clean smooth dish towel generously sprinkled with powdered sugar. Roll cake and towel together into a tight jelly roll, starting at the narrow side. Allow to cool in the fridge for 1 hr. Unroll, carefully remove dish towel. To make the frosting add the cream cheese, butter, and vanilla in a bowl, beat until it is smooth. Add powdered sugar in 1 cup increments, once it is all mixed and smooth mix in the cinnamon. Spread cream cheese frosting and reroll. Chill and serve. Freezes wonderfully!
