2 1/2 cups of cooked black beans (rinse and drain if using canned)
3/4 tsp salt
1/4 cup water
1 Tbsp vegetable oil
4 large cloves of garlic, minced
1 jalapeņo pepper, finely chopped (or dried chili flakes)
2 Tbsp fresh lime or lemon juice
2 Tbsp fresh cilantro, finely chopped (can use from a tube, frozen cubes etc.)
1 tsp chili powder
1/2 cup salsa
cayenne pepper
2 green onions, thinly sliced
1//2 cup grated cheese (optional)
Corn chips, crackers or veggies for dipping

Directions:

Puree the beans in a food processor with the salt and 1/4 cup of water.
Preheat the oven to 400 degrees F.
Heat the oil in a skillet over medium heat. Saute the garlic and jalapeņo until tender (2-3 min.)
Remove pan from the heat and stir in the beans, lime juice, cilantro, chill powder, salsa, cayenne to taste and half the green onion slices.
Spoon the dip into a 1-quart baking dish, top with the grated cheese, if using. Bake for about 20 minutes until hot and bubbly. Garnish with the remaining green onions and serve with the corn chips.

This is a great party dip but I have also served it as part of dinner. I have grown to love cilantro but I find it doesn't stay fresh for more than a few days. So, if you do purchase it, plan to use it or, preserve it. You can also buy it in a tube but I'm not sure what else slides out of there. Frozen cubes are sometimes available too. I have also added a recipe for freezing cilantro under vegetables.
