1 lb Italian Sausage
2 cloves Garlic
3 Tbsp. Basil
3-4 (14.5 oz) cans Tomatoes
1 (6 oz) can Tomato paste
1 lb pkg Lasagna noodles
3 c. Ricotta cheese (or cottage)
1/2 c. Grated Parmesan cheese
2 Tbsp Parsley flakes
2 beaten Eggs
1 pkg frozen, chopped spinach, cooked
1 lb Mozzarella cheese, sliced thin

Directions:
Directions:
Brown meat slowly, spoon off excess fat. Add garlic, basil, tomatoes, tomato paste. Simmer uncovered 30 minutes, stirring occasionally. Cook noodles in large amount of boiling water until tender; drain and rinse. Combine ricotta cheese, Parmesan cheese, parsley, and eggs. Place 1/2 of the noodles in a 9x13 baking pan. Spread 1/2 ricotta cheese mixture, add 1/2 mozzarella cheese, 1/2 spinach, and 1/2 meat mixture. Repeat layers ending with meat sauce. Bake at 375 about 30 minutes. Let stand 10 minutes before cutting in squares. Filling will set slightly.
