1 qt. whole milk
2 sticks butter
4 cups shredded white cheddar cheese
2 cups shredded Monterey jack cheese
1/2 cup grated Parmesan cheese
1/3 cup all purpose flour
5 5 oz. cans sliced potatoes
Salt & Pepper

Directions:
Grease 13x9 baking dish with butter. Melt butter in large pot over medium heat. Add flour to pot and whish together. Add milk slowly while whisking, salt & pepper to taste. Add 1 cup of cheddar cheese, Monterey jack, and Parmesan cheese slowly to pot whisking consistently. Once melted, set pot aside. Drain potatoes and place one layer of potatoes slices to cover bottom of dish and cover with cheese mixture. Repeat layer of potatoes and cheese sauce until all sauce and potatoes are gone. Sprinkle remaining cheese on top and paprika over top of dish. Bake at 400º for 40 minutes.
