Ingredients: • 2 1/2 tbsp lemon juice • 1 1/2 tbsp olive oil • 2 1/2 tbsp white wine • 1 stick butter (can substitute more olive oil, wine and lemon juice to avoid butter) • 4 roma tomatoes (diced) • 3 green onions (sliced like chives) • 1/2 a jalapeno diced (if you like spicy) • 1 tsp lemon zest • 1 tsp salt (to taste) • seasoned pepper (to taste) • 6-8 garlic cloves (or more if like garlic) • 1/2 red bell pepper chopped • 30 peeled shrimp

Directions:1. Melt butter in sauce pan with garlic, lemon juice, olive oil and white wine. 2. Add green onion, salt, red bell pepper and seasoned pepper. Once bubbling add shrimp and lemon zest. 3. Add tomatoes when shrimp are half way cooked. Pour over pasta of choice (spaghetti or angel hair preferred). |
