5 potatoes
8 slices bacon
2 cups chopped onion
3/4 cup chopped green onions
3 tbsp. flour
1 1/2 tsp. celery seed
2 tsp. dry mustard
2/3 cup sugar
2 cups beef broth or bullion (2 cubes or tsp)
1 1/2 cups cider vinegar
1 tsp. black pepper
1 tsp. salt (to taste)
1/2 cup Italian flat leaf parsley chopped

Directions:
Directions:
Bring a large pot of salted water to a boil. Add potatoes in jackets, cook till tender but still firm, about 15 minutes. Drain, cool, remove skin and slice. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Save bacon fat. Saute onions until tender in reserved bacon fat. Add the flour, sugar celery seed, dry mustard, black pepper, salt, broth or bullion and vinegar to skillet and cook over medium heat until dressing is thick. Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm with parsley garnish.
