several boneless chicken breasts
1 to 2 stalks celery, finely chopped
1 small to medium onion, finely chopped
2 T. mayonnaise (more or less)
1 tsp. lemon juice (more or less)
salt & pepper, to taste

Directions:
Directions:
Boil boneless chicken breast in water with a little salt until done. (You may season the water as you like if you want to save the broth for soup.) Cool the chicken. Once cooled, chop into small pieces. Add finely chopped celery & onion, mayonnaise, lemon juice, salt & pepper. Mix together.
