2/3 cup shortening
1 1/2 cups sugar
2 eggs
1 to 1 1/2 cups mashed bananas (very ripe)
1/4 cup buttermilk
2 cups flour
1 tsp baking soda
Caramel Icing:
2 cups sugar
1 cup evaporated milk
1 T butter
3 bananas, sliced

Directions:
Directions:
Preheat oven to 350º. Cream shortening, then add sugar; cream again. Add unbeaten eggs one at a time, Add mashed bananas with buttermilk. Stir well. Sift dry ingredients and fold in.
Grease and flour two 9 inch round pans. Pour batter into pans. Bake for about 30 min, or until cake tests done.
Icing: Cook sugar and milk to soft ball stage. Add butter. Beat until thick enough to spread of cake.
Slice bananas and place on top of the bottom layer. Top with caramel frosting. Add second layer and repeat banana step and frosting step. Spread remaining frosting on sides of cake.
