1 8" baked pie shell
1 qt. washed, drained, & hulled strawberries
2/3 c. water
1 c. sugar
3 Tbsp. cornstarch
1/3 c. water
3 oz. pkg. cream cheese, softened

Directions:
Directions:
Simmer 1/4 of the strawberries (1 c) with 2/3 c water for about 3 mins. Blend sugar, cornstarch & remaining water (1/3 c) to boiling mixture. Boil 1 minute, stirring constantly. Cool. Spread softened cream cheese over cooled baked pie shell. Put aside some choice berries (1/2 c), put remaining berries in baked pie shell. Cover with cooked mixture. Garnish with choice berries. Refrigerate until firm (2 hrs.).
Serve with whipped cream!
