Ingredients:  
1 cup chopped onion
3/4 lb. mushrooms, sliced
3/4 lb. zucchini, sliced
1/4 cup butter
2 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1/2 lb. Monteray Jack or Swiss Cheese
double pie crust
1 egg yolk
1 Tbsp. water

Directions:
Directions:
In large skillet, saute onion, shrooms, and zucchini in butter until crisp=tender (5 minutes). Drain.
Add flour, salt, pepper, & thyme. Mix lightly to coat. Remove from heat. Preheat oven to 375º.
Prepare pie crust in a 9" pan.

Combine mushroom mixture and cheese. Pour into pie shell. Create a pie crust lattice on top. Brush with egg yolk & water. Bake 40 minutes.
