2 T. butter
1/2 c. finely chopped carrot
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1 c. diced potato
1/2 c. butter
1/8 c. all purpose flour
1 14 oz. can chicken broth
1 14 oz. can corn, drained
1 bay leaf
3/4 tsp. salt
1/2 tsp. cayenne pepper
1/4 tsp. each dried thyme, oregano,sage.
1 c. heavy cream
1 pint shucked oysters and juice (bits of shell removed)

Directions:
Directions:
1. In a large pot, saute chopped vegetables and diced potato in 2 T. butter until potatoes are softened. Do not brown.
2. In another large pot, melt 1/2 c. butter and stir in flour. Cook 5 minutes, stirring.
3. Whisk in the chicken broth to the flour mixture. Add the sautéed vegetables, corn, and seasonings. Simmer 30 minutes over medium heat, stirring as needed.
4. Whisk in cream and add oysters. Bring to simmer, but do not boil.
