2 1/2 cups flour
1 tbsp. plus 1 cup sugar, divided
1 tsp. salt
1 cup shortening
1 egg, separated
1/2 cup milk
1 tbsp. cinnamon
5 tart apples, peeled

Directions:
Directions:
Combine flour, 1 tbsp. sugar and salt; mix thoroughly. With fork or pastry blender, cut in shortening.
Mix egg yolk and milk together and add to dough, mixing thoroughly.
Divide dough into 2 pieces, with one slightly larger than the other. Take the larger half and roll into rectangle about 8 by 14 inches.
Place on ungreased jellyroll pan (the filling may run off the sides if you use a sideless cookie sheet).
In large bowl, mix together 1 cup sugar and cinnamon. Slice apples and add to cinnamon-sugar. Spread apple filling over crust, leaving 3/4 inch around the edges. Dot with butter.
Roll out remaining dough and place on top of apple filling. Fold edge of bottom crust over top edge and crimp as with pie. Cut a few slits in the top of the strudel. Brush top crust with lightly beaten egg white.
Bake at 350º for 25 minutes or until crust is lightly brown and crust is set. Remove from oven. Serve warm or at room temperature. Serves 6-8.
Variation: Use 1 (21 oz.) can apple pie filling in place of the fresh apples.
