2 medium or large green tomatoes
salt and pepper to taste
1/2 cup olive oil
1/2 cup flour or corn starch
1 egg
bread crumbs or corn meal (panko bread crumbs are recommended)

Directions:
Directions:
Wash tomatoes, pat dry with paper towel. Slice tomatoes about 1/4 thick. Sprinkle salt and pepper on tomatoes. Dip each slice of tomato in the flour, then the egg wash, (mix egg white with 1 tablespoon of water). lastly dip the tomato in the bread crumbs or corn meal. Place each slice in the hot oil. Cook turning once or twice until golden brown. Remove when done, place on paper towel. Serve hot.
