2 C lukewarm milk
1/2 C sugar
2 tsp. salt

2 T dry yeast
2 eggs
1/2 cup soft shortening
7-71/2 C sifted flour

butter

3/4 C sugar
1 tsp Almond Extract

Walnuts, chopped (optional)

Glaze: powdered sugar, milk, almond extract

Directions:
Directions:
Mix together milk, sugar, and salt.
Crumble into mixture yeast and stir until yeast is dissolved. Stir in eggs, shortening, and flour. Mix in first with spoon, then with hand...
Add flour in 2 additions using the amount necessary to make it easy to handle. Handle and knead the dough then round up and put in large bowl and cover and let rest ~15 min. so dough is about double from original size. Punch down and then let rise again, divide evenly into 3 balls.

Melt butter.

Mix sugar/almond extract. set aside.

Take 1 dough ball and spread out onto a pizza pan by hand easing it to fit. Spread melted butter on dough that is on pizza pan. Add 1/3 of the sugar/almond extract spread over butter. (If walnuts are desired add a layer over almond layer)

Stretch 2nd dough ball out over 1st layer and repeat topping of butter and almond/sugar mixture.(walnuts if desired)
Repeat with 3rd dough ball and toppings as above.

Take a 3" diameter glass and press into middle of dough to crease the 3 layers together but do not cut through; With scissors cut wedges from outside edge to glass crease-each wedge is ~21/2" in widest part. After you have first wedge cut.- twist 3 times and then set down and repeat around remainder of dough. Sprinkle with Almond/sugar over all.

Bake 350º for 20 minutes or until golden brown.

After taking out of oven let cool. While cooling, mix a glaze to drizzle over coffee cake once cooled to lukewawrm. (I usually add a few drops of almond extract to glaze- thats what makes it so good!)

For excellent eating and keeping quality, keep dough as soft as possible, almost sticky...just so you're able to handle.
