1 lb. lean ground beef
1 onion, chopped
1 cup Thick and Chunky Salsa
1-1/2 Tbsp. chili powder
3/4 Tbsp. cumin
2 cans Mexicorn, drained, divided
1/2 to 3/4 cups Cheddar cheese
Left over mashed potatoes, seasoned to your liking, about 4 to 5 cups
Tortilla chips, if desired

Cook ground beef and onion. Drain. Stir in salsa, chili powder, cumin and 1 can of the corn. Cook until heated through.
Meanwhile prepare potatoes and put in a 2-quart casserole. Spread the meat mixture over the potatoes. Add the final can of corn over this. Spread with cheese. Bake for about 30 minutes at 350-degrees. Garnish with tortilla chips if desired.

You can also use 1 pouch of Betty Crocker instant potatoes if you do not have mashed potatoes.
