SALAD
Fresh baby spinach, carefully washed to eliminate sand, then dried in salad spinner.
4-6 slices of bacon fried and crumbled.
1 small can of mandarin oranges

SWEET AND SOUR POPPY SEED DRESSING
1/3 cup vinegar
½ cup sugar
1 cup oil
1-1/2 tbsp poppy seeds
1 tsp dry mustard (optional)
1 tsp salt (optional)

Directions:

Mix all dressing ingredients together. Adjust proportions of vinegar and sugar to taste.
Serve over baby spinach leaves, garnished with crumbled bacon and sections of mandarin oranges (canned oranges in light syrup or juice work fine for this recipe).

This salad always surprises guests, and is easy to make; the only time consuming part is frying the bacon. You can measure the other ingredients and wash the spinach while the bacon is cooking.
