1 boneless skinless turkey breast (1lb)
1/3 cup all purpose flour
2 eggs
1 tbsp. milk
2 1/2 cups fresh bread crumbs
1/3 cup grated Parmesan cheese
3 tbsp. finely chopped fresh parsley
3/4 tsp. each salt & pepper
1/2 tsp. dried thyme
3 tbsp. vegetable oil
2 tbsp.. lemon juice
1 tbsp.. extra virgin olive oil
1/2 tsp. Dijon mustard
4 cups mixed greens

Starting at tapered end of turkey breast, slice crosswise on an angle into 1 inch think pieces, pat dry with paper towel.
Place each cutlet between plastic wrap; with meat mallet, pound to scant 1/4 inch thickness.
Pour flour into shallow dish, whisk eggs with milk. In third shallow dish, combine bread crumbs, cheese, parsley, salt, pepper and thyme. Dip scaloppine into flour, turning to coat both sides; shake off excess.
Dip into egg mixture, allowing excess to drip back into dish. Press into bread crumb mixture to coat both sides.
In large non-stick or cast iron skillet, heat 2 tbsp. of vegetable oil over medium high heat; fry scaloppine, in batches, turning once and adding remaining oil as necessary. until golden, about 4 minutes. Place in single layer on paper towel-lined baking sheet. Keep warm in 350º F oven.
In large bowl, whisk together lemon juice, olive oil and mustard. Add greens; toss to coat. Serve on scaloppine.
