Ingredients:  
4 tbsp olive oil
4 tbsp butter
2 chicken breasts, cut in bite size pieces
450 g fresh or frozen scallops
1 lb shelled shrimp
4 cloves garlic, minced
1 tbsp sugar
2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne
3 bay leaves
28 oz can diced tomatoes
1 cup white wine
1 cup chicken broth
1 1/2 cups long grain rice

Directions:
Directions:
Brown chicken in butter and oil. Add remaining ingredients and bake in oven until rice is tender, about 30 minutes or so.

Any combination of seafood is good in this dish.
