3 C. Sugar
1 C. plus 2 Tbsp. Butter, softened
6 Eggs
1-1/2 C. Milk
4-1/2 C. Flour
1-1/2 Tbsp.Baking Powder
1-1/2 tsp. Salt
Rind of 3 Lemons, finely grated
Glaze:
1-1/2 C. Sugar
Juice of 3 Lemons

Directions:
Directions:
Preheat oven to 350º. Grease 5 Mini-Loaf Pans (5 3/4" x 3 1/4" x 2 1/4") with butter or shortening.
Bread:
Combine all ingredients (except the lemon rind) together in a large bowl. Blend well. Stir in the lemon rind. Pour into prepared loaf pans. Bake on center rack of oven for about 1 hour, or until a toothpick inserted in the center of the loaves comes out clean. Remove from pans and set on a large platter right side up.
Glaze:
In a heavy saucepan, combine sugar and lemon juice. Cook over medium heat for about 2 minutes, or until the sugar is completely dissolved.
While the bread loaves are hot, pour the Lemon Glaze over them.
