Beat together 2 – 3 minutes:

Cake mix (yellow or lemon)
4 eggs
1 box instant lemon pudding (3.5 oz)
¾ c oil

Spray muffin pan and fill ½ full
Bake at 350 for 12 minutes

Lemon Glaze

1 lb box powdered sugar (sifted)
3 T oil
zest of one lemon
3 T water
1/3 to ½ c fresh lemon juice



· Stir all ingredients together until smooth
· Stick fork into muffin from underside
· Dip into glaze and lay on rack to drain

* The first time I made these I used a lemon jiffy cake mix which was probably too small since I don’t recall lessening any of the other ingredients. However, that first batch was one of the best that I remember making from this recipe. Everyone loved them! I should change the name to Disappearing Lemon cupcakes.
