2 T butter
5 ribs celery, thinly sliced
1 16oz bag cornbread stuffing mix, prepared according to directions
2 C Fritos, finely crushed
1/2 bunch cilantro, chopped
6 oz can chopped green chiles
salt and pepper to taste
chicken broth as needed to moisten
6 tamales sliced into 1/2" pieces

Preheat oven to 350 and grease a 3 qt casserole dish. Saute onions and celery in butter in dutch oven or large skillet till softened but not brown. Add prepared stuffing, Fritos, cilantro, green chiles, salt and pepper. Toss together adding chicken broth to moisten slightly. Fold in tamales and pile into prepared casserole dish. Drizzle with broth if needed to keep dressing moist while baking for 15-20 minutes.

The Fritos give this dressing a real roasted-corn flavor, and the tamales are a delicious addition! Add some jalapenos if you want more fire! It goes well with a variety of meats...all year long. And it freezes well, too.
