Meat-Potato Quiche Recipe

3 T. Vegetable oil
3 c. coarsely shredded potato
1 c. grated swiss or cheddar cheese
3/4 c. cooked chicken, ham, sausage, or hamburger
1/4 c. onion
1 c. evaporated milk
2 eggs
1/ t. salt
1/8 t. pepper
1 T. parsley

Directions:
Preheat oven to 425º
In 9" pie pan stir potatoes and oil to make a crust
Bake for 15 min until beginning to brown, then remove from oven.
Layer cheese, meat, and onions.
In a bowl beat together milk, eggs, salt, and pepper.
Pour mixture into pie pan.
Sprinkle with parsley.
Return to oven and bake @ 425º 30 minutes or until lightly browned and knife inserted 1" from edge comes out clean.
Allow to cool 5 minutes before serving.
