Ingredients: 1 Lg can crushed pineapple 1/4 c sugar 2 Tbsp Corn starch
1 (8oz) bowl of cool whip 1 (8oz) cream cheese (softened) 1 c. powdered sugar
Sliced Strawberries (Optional)
***TIPS: I have found I like this best when I use a good brand pineapple that is in its OWN Juice...instead of the heavy juice...so it dosen't end up to sweet!

Directions:(Top Layer) 1 Lg can crushed pineapple 1/4 c sugar 2 Tbsp Corn starch Drain Juice from the pineapple into a small sauce pan. Add Cornstarch and sugar then cook over Medium heat until thick. Then put in the fridge and chill completely. Add in Pineapple and put back in fridge until you are ready for it later. ----------------------------------------------------------------------------------- (Bottom Layer) 1 c. pretzels (Crushed) 1 stick butter (softened) 1/2 c sugar Melt the butter then mix in sugar and pretzels. Press into the bottom of a 9 x 13'' pan. Set Aside.------------------------------------------------------------------------(Middle Layer) 1 (8oz) bowl of cool whip 1 (8oz) cream cheese (softened) 1 c. powdered sugar Mix together all 3 ingredients and beat well. Spread this mixture over the pretzel crust you previously made. then spread the pineapple mixture over the top of it all. This tastes BEST when you put it back in the fridge and let it chill for awhile.
----I have been wanting to add in a layer of Sliced Strawberries over the Middle layer so they would be just under the pineapple layer.... I think this would taste yummy....but like I said...I haven't tried that "YET"!!! |

Notes: *****My aunt Judy makes this and prefers not to crush up her pretzels as fine for the crust.... I like it both ways...but prefer them crushed finer! This would be up to your own personal preference!*****
