Ingredients: 1 package Betty Crocker® wild blueberry muffin mix 1/2 cup Milk 1/4 cup vegetable oil 2 eggs 1 cup of fresh or frozen Blueberries (thaw first if frozen)

Directions:Preheat oven to 425ºF (or 400ºF for dark or nonstick pan). Drain the can of Blueberries that came in the box of muffin mix; rinse and set aside. Stir together the: muffin mix, water, oil and egg in medium bowl just until blended (batter may be lumpy). Gently stir in both things of blueberries. Drop batter by full rounded tablespoonfuls about 2 inches apart onto cookie sheet lined with parchment paper. Bake 7 to 9 minutes or until edges and tops begin to brown. Cool 1 minute before removing from cookie sheet. Eat and Enjoy with a nice big COLD glass of MILK.
*****I haven't tried it yet but I'm Thinking you could do this same recipe using any of the Muffin mixes such as the Chocolate chip Muffins...you could add in Extra Choc Chips or Peanut Butter Chips. ****** |
